Many people may think that charcoal makes yakiniku delicious. However, that is not really the case. There might be more benefits for gas.
The benefits of charcoal has to do with far-infrared radiation effect and radiant heat and the flavor unique to charcoal. This method makes the surface crispy and the inside juicy with a good flavor. This is why it has been used to grill eel and yakitori that have been made in Japan since long ago.
