Quintessence is a French restaurant that represents the best level of French in Japan, which located in the quiet area of Gotenyama, Shinagawa. As a well-established one, Quintessence achieved world gourmet guide award continuously over the last 11 years. Owner Chef Shuzo Kishida earned his professional skills at the world gourmet guide award restaurant “L'Astrance” in Paris, under the guidance of Chef Pascal Barbot. This is the origin of Chef Kishida's close attention to three aspects: ""Produit (ingredients)"", ""Cuisson (cooking)"", and ""Assaisonner (seasoning)"".
The Chef's specialty —offered throughout the year— the “Salt & Oliver Goat’s Cheese Bavarois”, prepared by blending olive oil, to balance the delicate changing fat of fresh milk delivered every morning from Kyoto, and carefully seasoned with Guérande Salt. This specialty depicts an emerald river flowing beautifully over a pure white hill.
Quintessence welcomed its tenth anniversary in May 2016, offers a magnificently radiant and intimate space with only seats and private rooms for approximately 30 people in total, continuedly achieving world gourmet guide award and Asia's 50 Best Restaurants award. Chef Kishida devotes absolutely everything to the earnest selection of the best ingredients, working precisely for the moment when he could serve top-class dishes to his guests. Although it is said that securing a reservation here is extremely difficult, people should visit this restaurant at least once in their lifetime. This is the only way to experience the true worth of Chef Kishida's magnificent cooking, and the restaurant’s astounding service and ambience.
