Since it opened in 2014, Noyashichi has gained popularity with its own unique Chinese cuisine. The owner-chef Shinya Yamamoto, who became independent after gaining experiences at the world gourmet guide award Mitamachi Momonoki, moved and reopened in Arakicho the restaurant in June 2017, about 2 years after the opening. Thinking that ""we want to improve the quality of each dish and increase customer satisfaction,""they create their own ideal dish and continue to evolve every day.
Owner-chef Yamamoto aims to create ""a dish that gives makes you feel burden-free after the meal while still feeling satisfied that you had the Chinese food."" To achieve this goal, Japanese cooking techniques were used. For example, the soup stock used as a base for cooking is originally made by mixing chicken bones with ground chicken or pork, but in Noyashichi, kelp is used instead of chicken bones to bring out the flavor of the ingredients without the peculiar smell of chicken. Chinese food has 3 basic elements, ""scent, color, and taste,"" which are often expressed with seasonings such as ""jian"" (sauce). While considering the balance of these 3 factors, owner-chef Yamamoto interprets it as ""Bring out the scent of materials,"" especially in terms of aroma, and becoming the Noyashichi style of cooking.
The interior is a Japanese space that uses plenty of tamo with little sound leakage. At the counter seats, there is room between the wooden floor and the seats so you can relax and enjoy the live feeling of owner-chef Yamamoto making the cuisine. The private rooms can accommodate up to 12 people. Please enjoy the new cuisine that brings out the advantages of both Chinese food and Japanese food.
