"Edomae" sushi traces its origins to the street food stalls of Tokyo. "Sushi Yoshii" began in Higashi Azabu in Roppongi and then moved to Aoyama for its relaunch in 2018.
The restaurant retains its original concept of the fusion of food and art in "wabi-sabi" style (the notion of finding beauty in imperfection and incompleteness). There are only 6 counter seats, with customers treated to a display of authentic art and delicious sushi.
The chef, Yuji Yabe, has been a sushi craftsman for over 30 years and has also worked overseas. He serves carefully prepared premium quality sushi, using his beautiful cutting board as his stage; he forms the sushi with his hands, and the space takes on the atmosphere of a refined sushi restaurant. Nothing is wasted. The craftsman fascinates and unexpectedly delights you with his exquisite sushi creations.
At "Sushi Yoshii", the figure of the chef at work is another type of art that customers can enjoy. To this end, there is an antique counter and the food is on a par with the international works of art on display all around.
Space has the air of an art gallery, a place where diners can savor exquisite sushi that delights and captivates, not just in terms of taste, but as an experience for all of the senses.
