Independent opening in 2006 in Ginza, Tokyo, a battlefield of Edo-style Sushi, moving to the Ginza in 2016 and setting up a new castle - a world gourmet guide award ''Harutaka"" by the owner chef Takahashi Harutaka. Originaly from Asahikawa, Hokkaido, he has a career over several years training at famous Sushi restaurants in Sapporo and Ginza.
Mr.Harutaka visits Toyosu Market every morning to purchase the finest ingredients without any compromise. It is because his strong desire to have guests eat in the real taste of season that can bring out the charm of the fish as much as possible. Only one course available at ''Harutaka"" , the chef combines 2 types of Sushi rice to brings the special salty and sour taste of it. Adjusting the temperature of ingredients with rice, thousands of visitors stop by here just for the impressive Sushi he made.
There are 12 white wood L-counter seats and private room, the space with gentle tension to explore the most delicious sushi. It is suitable for a casual dining or dating with sushi-lovers. Ginza's famous -''Harutaka"" will continue to inherit the spirit of the sushi here forever.
