Edomae-style sushi “Sushi Umi” is about 10 minutes walk from Gaienmae Station. The chef, Koichi Taira, is from Kagoshima Prefecture and plunged into the world of sushi with a desire to find a job that uses hands. After gaining experience at a sushi restaurant in Osaka, a Japanese restaurant and a hotel, he became the chef of this restaurant in August 2019.
He says, "I want to master the classic Edomae-style sushi without putting additional elements," and he uses his outstanding skills to reach new heights. Ingredients, such as seafood and vegetables, are purchased directly from Toyosu Market and fishermen from all over Japan, using the most delicious ingredients of the season. For vinegared rice, he uses Tomin rice from "Hitomebore" grown by Minoru Ishii, a master of organic farming, and it is cooked 20 to 30 minutes before the guest takes it to his mouth, in Shigaraki Kumoigama kiln by Ippento Nakagawa, an earthen-ware maker in Shiga.
The restaurant has only 10 plain wood counter seats. It is recommended for entertaining guests and dining together, as well as for entertaining overseas guests since English service is available. You can spend your time as an adult while drinking in a calm space. The atmosphere of this restaurant makes you feel relaxed, and once you visit this sushi restaurant, you will want to come back many times.
