""Tsunokami-zaka Koshiba"" is a Japanese restaurant located in Shinjuku, Tokyo. This restaurant is in a quiet residential area that takes little distance from the hustle and bustle of Shinjuku.

You can enjoy authentic Japanese cuisine, mainly charcoal-grilled dishes, made with fresh seafood and seasonal vegetables.

The chef Mr. Koshiba trained his skills at several Japanese restaurants in Kyoto, Hiroshima and Ginza. After worked as the head chef at the Japanese restaurant in Kagurazaka, he opened ""Tsunokami-zaka Koshiba"" in Akebonobashi (near Shinjuku) in September 2016.

Mr. Koshiba's culinary philosophy is, taking much care of making a wonderful Hassun (八寸). Hassun is the basis of Kyo-ryori (traditional style Japanese cuisine originated in Kyoto) and so refined. He hopes that guests enjoy the feeling of the Japanese seasons and have a happy time.

You can choose for your charcoal-grilled dishes that what seasonal ingredients you are desired to taste. They are all hand-picked by the chef, such as sea bream, soft-shelled turtle and Hida beef. In addition, chef uses ""Bincho-tan"" (the most famous charcoal for cooking in Japan) for charcoal-grilled dishes. You can also choose Oyako-don (rice bowl with chicken and egg) or Takikomi-gohan (rice cooked with various ingredients).

Some dishes are served in antique tableware, you can enjoy not only the taste but also the appearance of your cuisine.

Pairing sakes are all chosen on the basis of creating a perfect mariage with the dishes. In this restaurant, there are just tables and counter seats made of Yoshino-Hinoki wood. You could feel relaxed and comfortable in the atmosphere based on the bright grain of cedar.

It's suitable for dating at the counter seats and dinner with friends.

    This kaiseki restaurant is tucked away in a quiet location like a hidden gem. The atmosphere was comfortable, but the details conveyed discipline and persistence. The wait staff were very professional and thoughtful. Although they spoke very little English, they did their best to accommodate our every need. The chef's kaiseki course was truly a unique experience. Each dish was meticulously prepared before us, carefully assembled on beautiful pottery, then served and explained in the best way that he could. It was worth noting that the flavours were not particularly bold, but unexpectedly subtle, delicate and elegant, prepared in ways that drew out the essence of each ingredient. We were served a good variety of fish and seafood dishes that demonstrated perfect execution, which clearly requires a great level of mastery and effort. The course left me feeling warm, nourished and satisfied, without the heaviness and glugginess one might feel after a large dinner. I was grateful for having been served such an amazing meal by the chef and his team. I appreciated the level of detail given to every aspect of his restaurant: the selection of ingredients, elegant flavours, wonderful presentation, beautiful pottery, attentive staff, and comfortable atmosphere. It was a complete experience.
