"GINZA SIX" opened in the spring of 2017 as the largest complex infrastructure in the Ginza area in Tokyo. On its 13th floor, is this French restaurant "L'homme du temps signé à nu", a sister shop of Hiroo "à nu, retrouvez-vous". The store’s name having the meaning of "a person will never experience the same moment twice", showing their desire to create every guest a sparkling moment.
Sub Chef Mr. Yuichi Ubara has been entrusted under owner Chef Shohei Shimotsuke. Chef Shohei is a skilled Chef who has been served at "à nu" head restaurant located in Hiroo. After that, he also served in many famous Grand Maisons, such as "Tateruyoshino Shiodome", "La-rochelle Fukuoka", Paris "Makoto Aoki" and Michelin two stars Ginza "L'Osier". "I want to build a new era of Japanese French cuisine, construct future while being conscious of the origin of French" is what Sub Chef Ubara said. Carefully selected ingredients, include vegetables directly from contract farmers in Nagano and Kanazawa, fresh fish sent directly from Hagi Yamaguchi, and Ishigaki Beef from Ishigakijima are provided here. Lunch here would be the style of "Chef Recommend Course", and "Prefix course" for dinner, also Dessert Combinations would be prepared.
While inheriting the DNA of "à nu", here offers delicate cuisine that perfectly brings out the features of the seasonal ingredients, and pleasant hospitality, with an inquisitive spirit of "always better". The wine selected to combine the cuisine is mainly Burgundy and Champagne, you would find out new and natural wine gathered here.
Wine selection is by our Manager, Mr. Tetsunari Arai. After working for 2 years at "à nu ", he served also Ebisu "Q.E.D club" and ”Signature”, in Micheline one star "Ms. Mandarin Oriental Hotel". Again he came back and served as a maître d'hôtel at "à nu ". In addition, Mr. Yukinori Inagi, a senior leader who has experiences of entering the final screening in 2015 sponsored by the Sommelier Association, has experience in various categories restaurants such as "Mona Lisa Ebisu restaurant" and wine bar "CHOUETTE rouge".
Space designed entering for comfortably of customers, both domestic and overseas, is made by female directors. On the walls of the dining, "books" representing "momentary feelings, prayers, feelings" are noted, where you can feel feminine delicacy and powerfulness. A counter seats that can communicate with the Chef is a good suggestion for date. A movable private room for maximum 8 people, and a semi private room for 4 persons are perfect for business meals and family dinning.
