Chef Seiichiro Otaki’s career is spectacular. He was an active part of the launch of Madrid, Spain’s two-star restaurant ZARANDA. After that he worked as sous chef at Nihonbashi, Tokyo’s modern Spanish cuisine restaurant Restaurant Sant Pau. At EL FUEGO DEL TORO, Chef Otaki adds Josper, a Spanish-made machine that combines the features of an oven and a grill, to Spain’s traditional cooking technique that is char-grilling, creating the new Spanish char-grilled dish. The aroma of charcoal and juiciness from being roasted in the oven was combined to create an evolved char-grilled dish. Black Angus beef, Shorthorn beef, Black Iberian pork, and even wild game are some of the meat being cooked, changing variety each season. They are then dry-aged in a custom-made machine, bringing out the flavor and served in their best state.

A popular course includes meat dishes all prepared using Josper. In addition, there is a collection of Spanish wine from various regions, Spanish beer, and other beverages associated with Spain, ready to be served to guests as they enjoy the harmony of food and wine.

The atmosphere of restaurant is simple and modern based on black and white interior. Elegance and playfulness are combined through counter and tables made from high quality Guibourtia wood, washi (Japanese paper), and cow sculptures made by prominent Spanish artists. Further into the restaurant is a semi-private room from where you can see the charcoal kiln, perfect business entertainment. The casual atmosphere and delicious food at EL FUEGO DEL TORO is sure to draw you closer to those around you.
