A 1-star sushi bar with the spirit and hospitality of Edo-mae style

Kitakyushu is blessed with fresh and rich seafood as it faces the Genkai-nada and Hibiki-nada seas. Sushi Takemoto, with 1-star, has opened its doors for 10 years in the quiet residential area of Kokura known for its many reputable sushi restaurants.

Owner Daisuke Takemoto trained in Tokyo for 10 years and became independent at the young age of 26. "We have the best ingredients in Japan", he boasts, as he purchases only high-quality seafood through Tsukiji, such as ark clam from Yuriage Harbor and Japanese horse mackerel from Izumi, Kagoshima prefecture. Takemoto also purchases seafood from Chiba and Tokyo, in keeping with the Edo-mae sushi spirit. Specially contracted rice is used for the sushi - it is grown and cultivated in the most suited climate in Iidagawa, Akita prefecture, and cooked until plump in a Nambu Cast Iron Kettle using Kumamoto's natural water.

The vinegar used with the rice is also special quality, Yokoi's special vinegar used by many Edo-mae sushi restaurants. Takemoto continually pursues the spirit of Edo-mae sushi because he "wants customers to enjoy delicious sushi". The sushi matches well with over 15 different types of the restaurant’s carefully selected Japanese sake. In addition, the restaurant arranges performances by maiko and other artists from Kyoto with the desire to "be a bridge to the traditional Gion culture of Kyoto". One of the attractions of Sushi Takemoto: it is the only sushi restaurant where you can experience traditional Japanese culture.

The interior gives off an atmosphere of luxury with its marbled floors and cypress wood counter. The Italian-made chairs are placed at the perfect distance for customers to be seated comfortably without worrying about those seated around them - a part of Takemoto's consideration. It is understandable that many choose this restaurant for business entertainment due to its superb hospitality, but you are also welcome to visit for anniversaries or dates, with that important someone.
