nomad is a hideaway restaurant, located in a quiet residential area that is 5 minute-walk from Ebisu Station, was opened in June 2017. It is the 3rd restaurant opened by the popular Italian restaurants La libera in Yoyogi and Osteria La libera in Ebisu. With the concept of "a comfortable space for the modern nomad",it has a relaxed and enjoyable atmosphere and offers mainly course menu, unlike in the Osteria, where there are only à la carte menus.
Owner chef Katsuhito Miyazaki was trained at the famous Italian cuisine restaurant Ponte Vecchio (Kitahama, Osaka) for 4 years before he traveled to Italy. By traveling around and visiting famous restaurants in different regions, such as the one-star restaurant Locanda Vecchia Pavia in Lombardia, Piemonte and Veneto, Miyazaki learned a lot from the rich Italian cuisine and food culture. At nomad, Miyazaki makes use of the cooking techniques he acquired during his training. He uses ingredients which he acquires while traveling to the regions they are produced, and creates dishes which bring out the true flavors.
The traditional hand-made pasta is another must-eat. Many customers visit repeatedly specifically for the simple yet richly flavored pasta, for example, the tajarin from Piemonte and the bigoli from Veneto. The chef's meat dishes are also extraordinary. Carefully selected ingredients like duck and mutton from France are roasted for 2 hours over low temperature, cooked just before the arrival of the customers.
The interior of the restaurant is a relaxing space which incorporates the warmth of wood with modern concrete features. With counter and table seats and a private room, it is ideal for dates, business entertainment and girls' night out. Come and enjoy a glass of natural Italian wine with delicious cuisine.
