Homemade Okinawa noodles with Japanese-style multi-course made with the finest ingredients from Okinawa

Okinawa Soba Kaiseki "Toutoganashi" is located in an atmospheric 65-year-old townhouse in Naha City in Okinawa Prefecture. The restaurant serves a new style of Okinawan cuisine, focusing on homemade Okinawa soba noodles and incorporating elements of kaiseki cuisine. The name of the restaurant derives from "Toutoganashi", a word from Amami Oshima island that has long been used to express thanks. When the proprietor Shogo Muraoka was just starting out as a cook, he received the support of a chef from Amami Oshima, who taught him this word. The word's meaning encompasses gratitude for all one's opportunities.

Isao Itami, the head chef, has been working as a chef in Japanese restaurants since he was 18 years old, and also has served as the head chef at "Zarai Oita", a Japanese restaurant in Ginza. He travelled to Okinawa when he was 37, and in 2017, he assumed the position of head chef at Okinawa Soba Kaiseki "Toutoganashi". Mr. Itami says that by discovering high-quality items that were produced on this land, we can express the richness of Okinawa and communicate with our customers. Accordingly, he travels around markets in every corner of the prefecture, orders products from reliable suppliers and uses only these Okinawa-made ingredients in his cuisine. Each day he brings in the finest ingredients and thinks of how to bring out the best flavor, creating food as a once-in-a-lifetime opportunity.

A kaiseki course, with Okinawa soba as main, is available for both lunch and dinner. The Okinawa soba, made using a noodle-making machine in the restaurant, uses a blend of four different flours, mainly Okinawa-produced flours, to make the texture smooth and adds the aroma of wheat. Clear pork bone stock is combined with a soup made from bonito flakes and kombu. The are two dishes that are prepared right in front of the guests, such as Okinawa soba dumplings that uses Okinawan flour, or Nakajin Aguu pork simmered in sukiyaki-style. This method of providing the fun and flavor of the freshly-prepared food is highly popular. Even the drinks are produced in Okinawa, with rare varieties of Awamori and Kusu available in addition to other local beers.

The background music is Okinawan folk music that drifts through the restaurant interior, which incorporates Ryukyu tatami and other craft pieces produced in the prefecture to give a refined Okinawan atmosphere. Both table seating and private rooms are available and can be used for entertaining or anniversaries. Come and enjoy the very best that Okinawa has to offer to you.
