A new experience in Japanese cuisine that has a new definition in cuisine, vessels and space

Japanese Cuisine was added to UNESCO’s Intangible Cultural Heritage List and has since become widely known worldwide. While Japan has remained true to its heritage, Japanese cuisine has continued to evolve. "8080TOKYO" in Roppongi, with the concept of "redesign Japanese cuisine", has a new definition of cuisine, vessels and space which is a growing trend.

The head chef of 808TOKYO is Takuya Usami, who, after training at Hotel New Otani, gained more experience in Japanese restaurants in Akasaka and Tameikesanno before becoming the head chef of 808TOKYO. The course is a redesign from typical Japanese cuisine which offers appetizers and side dishes, starting with dishes with an impactful taste using seasonal ingredients, such as "harmony between steamed egg with sea urchin, sea urchin sauce and truffle", "sea urchin, crab, caviar and Kyoto Yuba with Tosa Jelly"... etc. After that, the course will continue with fish and meat dishes, which are parts of the regular Japanese course. Based on the staff's experience, the customers won't be able to enjoy the meat dishes if they were offered in the latter half of the course. So, from the latter half of the course, matured sashimi, small portions of 3-4 types of specialties dishes and sweet seasonal clay pot rice are served. The vessels are from SHIMOO design and Kutani yaki.

Sommelier Yaginuma Tokuhiro from Hiramatsu, will suggest pairing for these dishes. Customers can select from a wide selection of 40 to 50 different kinds of wine based o their preference. In addition, there are also 30 kinds of Japanese sake chosen by staff with the certificate of sake sommelier. It is also popular for customers to have wine in the first half of the course and then sake in the second half.

The concept of redesigning Japanese cuisine is also reflected in the interior design. The interior of the restaurant pays great respect to Japanese architecture and has a very stylish and calm atmosphere, from mud wall with straw-type design, to walls decorated by Kenichi Nagumo, a famous plasterer from Nishizawa Industries Co., Ltd. There are 36 seats, including 2 full private rooms, one semi-private room and 5 tables. These can be used for receptions, meals with friends, anniversaries and dates.
