Ginza has the highest concentration of gourmet restaurant in Japan. "Ginza Shibutani" is on the 2nd floor of a building on a side street just off the lively, restaurant-lined Ginza's Corridor Gai, not far from the Sukiyabashi intersection. As you open the door, you could enter a space decorated as a modern interior. What you find, in an atmosphere that is full of the extraordinary, is a new sense of Japanese cuisine that incorporates Western elements, based on the concept of "fusion of Japanese and Western in a new Kappo cuisine".

In particular, "Ginza Shibutani" focus on ingredients from Hokkaido, using the own special routes to purchase fresh seafood and vegetables directly from the production areas, and all cooked by the chef, Hokkaido native Yuichi Maruko. Hokkaido’s unique and always exquisitely delicious ingredients change with the seasons, such as the Hairy crab, King crab, Snow crab, sea urchins, Tokachi wagyu beef, and Shiretoko wagyu beef. That's a variety of other elaborate dishes that appeal even to gourmet guests.

And when you would like to a drink that you could match with your food, you could start with Japanese sake limited to each season, or enjoy various pairings with your dishes, choosing from shochu, wine, and Japanese whiskey. When it comes to wine, we have stock from the Big 5 chateaux of Bordeaux as well as Kenzo Estate, high-class wines with a worldwide reputation, making us also popular among wine enthusiasts.

In addition to the 5 counter seats, there are 2 private rooms. The private rooms can accommodate up to 10 people, making them suitable for dinner with close friends and family. It’s one of those hidden-away places in Ginza that, once you know about it, you will want to brag about it to someone.
