Sushi Masa Ishibashi is located in Ginza 8 chome, Tokyo, which is said to be home to the greatest sushi, and many professional restaurants. The owner-chef, Masakazu Ishibashi, had the skill to grow a sushi restaurant in Ginza (which has a sister store abroad) into a popular restaurant at a young age. He opened his own restaurant in November 2017.

Owner-chef Ishibashi was born in 1981. His parents ran a sushi restaurant in Tochigi Prefecture, and when he was a high school student, he was able to make a lot of things such as onigiri. After graduating from high school, he went to America and worked for a sushi restaurant run by a Japanese owner. Then, owner-chef Ishibashi realized that he had the skill to make people around the world happy, and worked hard to learn more about creating sushi and improving his English. After 5 years he returned to Japan.

He worked at a sushi restaurant in Ginza and led it to achieve Michelin one- star, then he went to its next restaurant in Singapore, where again he achieved Michelin two-star. Ishibashi, who has been enlightening customers with domestic and foreign cuisine, doesn’t just aim to create another sushi restaurant in Ginza, but a place where customers can come to relax and enjoy meals in a cozy atmosphere.

The restaurant's interior features many warm colored woods such as a wooden counter and wickerwork ceiling, which creates a high-quality and extraordinary experience. Owner-chef Ishibashi says that it is ideal to make customers happy by searching for delicious food without having to strictly adhere to the Edo-style of cooking. The vinegar rice is a blend of red vinegar which has been aged for 3 years and 5 years, to attain an exquisite taste. The taste of the fish also reaches new heights after being matured. Another great feature of Masa Ishibashi is the option to match the large selection of more than 30 Japanese sake with a number of ambitious dishes, such as chargrilled mackerel and truffle garnished with roe.
Owner-chef Ishibashi is also fluent in English, and there are many foreign guests. It is also an establishment suitable for entertaining guests from abroad.
