LE SEVERO is located in Hiroo, a refined area of Tokyo. It stands out from other stores because of its red store front. It is a bistro which specializes in aged beef. The head restaurant is located in Paris and has a 30-year history. The Japan branch opened in April 2016 and was the first chain overseas. With the concept of "a delicious steak that can be enjoyed easily", the restaurant provides delicious aged meat at a reasonable price. It is also popular amongst women for how easy it is to eat. The restaurant has attracted attention ever since it’s opening, and has been visited by gourmet chefs on a number of occasions.

The cuisine is prepared by Takeshi Inoue, who became a chef after training in France, and Takeshi Saita, who joined the restaurant as an executive chef after working at LE SEVERO and Hugo Desnoyer in Paris. Meat temperature control and skilled cooking technique enable the quality that is similar to that of the head restaurant in Paris. All beef is from grazing cattle, not only sourced from French and domestic cows, but also rare species such as Bazas beef and Brown Swiss cattle, which is known for being dairy cows, however by aging the meat, it becomes high-quality and very delicious.

The specialty is the Tartar Steak. LE SEVERO has been approved by the public health center as an establishment suitable for handling meat, so it is possible for customers to try raw meat here, which attracts many fans. The "compare different aged beef sirloin course" is also very popular where customers can enjoy French and domestic aged beef.

The restaurant's interior takes advantage of the warm wood feeling, the 1st floor features the kitchen and private rooms that hold 2-4 people, and the 2nd floor has 24 table seats. It is a delightful setting for dates, casual get together and entertainment. We invite you to flavor the delicious taste of aged meat from Paris.
