world gourmet guide award Tempura Shimomura is located in a residential area in Taito ward, about 5-minute walk from Shin-okachimachi Station. The owner, Mitsuhiko Shimomura worked as the assistant head chef for the famous tempura restaurant Tempura to Washoku in Yamanoue for 20 years. Tempura Shimomura opened in September 2017 as a restaurant where customers can enjoy tempura at a reasonable price, in comparison to high-end dining.

The seasonal ingredients are chosen by Shimomura himself from Tsukiji Market. From winter to spring, the seasonal courses include puffer fish, fresh sea urchin, carp sprouts, and cod sprouts. In the latter half of the course, a la carte sweet potato tempura is available, it is deep fried for 40 minutes, creating a firm texture and it is as sweet as a dessert. Brandy can be added to upon customer's preference, that has a taste similar to a chestnut glaze.

The carefully stocked ingredients are stored in a traditional ice refrigerator which keeps them from drying and remain in the best conditions. Sesame oil is used to fry the tempura. The pot to make the tempura have 2 temperature settings, low and high, to produce an exquisite temperature. A dipping sauce or Okinawa salt is then provided. Alcohol includes seasonal recommended sake, shochu, wine, etc. It’s the home-like hospitality of Tempura Shimomura which complements the tempura and made it a well-known restaurant.

This is a restaurant where the proprietress wrote the restaurant’s name plaque herself, and consists of 10 spacious counter seats, as well as table-seat for 4 people. The wood colors add warmth to the restaurant's atmosphere. Customers with babies are also welcome to taste the finest tempura in a warm atmosphere. Word of mouth made this a well-known restaurant and there is an increasing number of people who have traveled from far away to visit.     天ぷらの揚げ方、お味、ボリューム、接客、お部屋の内装、価格、全てにおいて満足させて頂きました。 特に、甘鯛は味、触感、皮目から中心部にかけてのグラデーションのような揚げの変化、添えられた塩とのバランスと乳化具合、全てにおいて飛び抜けておりました。また稚鮎も抜群に美味しく、ワタの苦みと身肉の甘みが存分に引き出されておりました。アナゴも皮目はパリッと揚がり臭みは抜けており、身肉はホロホロで優れた職人の技術に感嘆させて頂きました。 100点満点なのですが、締めの天丼については、タレの味が濃厚でしたので、柚子や酢橘などの柑橘を少し加味して頂けたりしたら、或いは山椒の粉を掛けられたりしたら更に良かったと思いました。また、タレの量を調節できたらとも感じました。さらに、締めのかき揚げについては、衣の素晴らしさを存分に味わうためにも、塩だれの天丼を選択できたらとも思いました【あくまで個人の感想です】。 素晴らしかったので、再訪させて頂きます。
