A chef who has experience abroad, offers Japanese cuisine from a new perspective.

Terra is a Japanese restaurant which opened in September 2017 in the heart of Roppongi. It was opened by Tatsuya Teramoto, who worked as the head chef for a Japanese restaurant in Sydney and was the first Asian to receive the title of "Sydney’s Best Young Chef". He opened the restaurant in order to offer customers a modern take on Japanese cuisine.

After working at restaurant Stellato in Shirokanedai and Gonpachi in Nishi-Azabu, he moved to Australia. He then worked as the head chef for a Japanese restaurant in Sydney called Yoshii Restaurant for 7 years, as well as a variety of other restaurants in Japan and abroad, before opening his own restaurant.

With this experience, he created Terra’s menu, which is a fusion of Japanese food and wine. He can carefully examine the taste of the dishes and how it will match with the wine, for example, he adds citrus or smoking techniques. One of the specialties is the dish called the Golden Egg. It is a dish where egg yolk and sea urchin are poured into the shell of an egg and the aroma of dried shiitake mushrooms is added. It is finished by laying it on a golden leaf. The taste of the Japanese soup stock is brought together, and you can taste the harmony of the flavors. There is also caviar icy soba noodles, which were inspired by caviar pasta, and covered with a fluffy mousse made from soba broth. The wine, which is recommended by a veteran sommelier, is mainly from Australia and New Zealand. In total there are about 120 kinds available, such as Bourgogne.

The restaurant's interior uses a lot of wood to create a quiet and calm atmosphere where customers can escape the hustle and bustle of the city. The Hinoki wood counter seats 8 people, accompanied by 8 table seats and 1 private room for 8 people, all of which are spacious, so customers are able to relax comfortably. It is a great choice for any occasion, from business entertaining to dates.

    We thoroughly enjoyed our meal at Terra and having Chef Teramoto serve and cook for us. Each dish was beautifully presented and tasted as good as it looked. Wine pairing was also excellent. We look forward to visiting again.
