“Nihon Ryori Wakabayashi” opened in November 2017 in Gaienmae, an area with many good restaurants, offers a nice and mature atmosphere. The owner Koji Wakabayashi, worked 12 years at a Japanese restaurant in the Kanto area and 10 years at “Aoyama Esaki,” a famous Japanese cuisine restaurant that maintained a Michelin 3-star for 7 consecutive years. During 7 of his 10 years at this restaurant, he served as the sous-chef to help uphold the standards of the restaurant, and when he was ready for the next step, he decided to open his own restaurant.

Mr. Wakabayashi not only purchases fish from the vendors he has known since his time at “Aoyama Esaki”, but also goes directly to the farms that use natural farming method for vegetables. In order to keep his food healthy, Mr. Wakabayashi minimizes the use of additives and flavorings and carefully considers the nutritional value of the ingredients. Mr. Wakabayashi incorporates elements from Western cuisine in dishes like yellowtail confit, he also offer a popular dish from“Aoyama Esaki”, the braised "Kinki (Idiot Fish)”. As a certified sommelier, Mr. Wakabayashi selects around 6 different wine, including Burgundy and Montrachet. In addition, he offers about 7 kinds of great Sake from all over Japan, which pairs well with food.

“Nihon Ryori Wakabayashi” features wood as the material for the floor and tables. There are 6 tables for 2, and 1 private room (up to 4 guests). “Nihon Ryori Wakabayashi” is perfect for special occasion, dinner meetings, or dates.
