Opened in February 2016, "Evoluer" is a French restaurant located in a quiet backstreet of the Fukushima area in Osaka. The owner-chef Ryujin Ogata is armed with 20-years of experience working for the Madoi Group, which is based in Kyoto and operates French, Italian, and other western-style restaurants. He has also achieved outstanding results in French cooking competitions such as Escoffier and Trophée Jean Schillinger.
Possessing experience in a diverse range of business conditions, exceptional creativity not constrained by genre, and a rich repertoire of techniques, Chef Ogata produces creative French cuisine fused with the essence of Japan. Insisting on domestic produce, he sends for seasonal ingredients from across the country and uses them to create subtle flavors well-suited to the Japanese palate.
For the course menu, in place of an aperitif, he serves Kyoto’s Kanbayashi Sannyu tea, which is only available in certain restaurants. This is followed by an hors-d'oeuvre incorporating seasonal ingredients in a style reminiscent of the Japanese Hassun dish, a specialty combining Shogoin Yatsuhashi and foie gras, and a number of other artistically arranged dishes to tantalize the eyes and the taste buds. These dishes are accompanied by a fine selection of wines, Japanese sake, and liqueurs, and there is an equally wide range of digestifs.
The facilities, including the cutlery and interior, serve to further complement the chef’s culinary vision. The knives are "Aritsugu," the napkins "Musubi," and the lampshades "Hiyoshiya," all fine Kyoto brands. The subtly placed vases and bowls are originals fired in Shimane’s Chikurai kilns, and the traditional Japanese accessories add spots of color to the elegant white toned interior. The main dining area can seat 18 customers, and there’s also a private room that can seat up to 10. This cozy atmosphere is perfect for enjoying excellent food and drink
