After spending 10 years as an understudy at the renowned "Takada Hassho" in Gifu, followed by 6 years managing the "Kogane" and "Wakamiya Hassho" locations, Mr. Tetsuya Otake decided the time was ripe to start an independent venture in Tokyo. In December 2017 his restaurant, named Nishiazabu Otake, opened its doors. The restaurant won a 1-star in the 2022 edition of the World Gourmet Guide.

"Takada Hasshou" is located on a back street in Nishiazabu, an area with quality restaurants abound. It was founded on the idea of, “offering a compilation of traditional Japanese Kaiseki style banquets to guests in an intimate space.” The focus is on using seasonal ingredients in a single course that changes monthly.

Beginning with Potato Harihari and Turtle Okara, dishes that were popular during his time at "Takada Hassho," and then continuing on to meat dishes cooked over charcoal, a quintessentially Japanese seasonal wan(soup bowl), and a Western-style croquette, the course is organized in an original manner that allows one to fully enjoy the flavors of the season. Mr. Otake’s talent is on full display, utilizing simple ingredients to create highly refined dishes that satisfy on all levels, from the wafting aroma to the extent of the flavor and umami, and finally the profound aftertaste.

Another feature of the restaurant in the unique manner in which the ingredients are procured. The charcoal grilled Duck available during the winter season is wild game served with wild growing plants from the Gifu area, while marine products from the Sea of Japan are shipped directly from the neighboring Fukui Prefecture. Complementing the cuisine is a seasonal menu of choice sake from across Japan that enhances the flavor of the banquet even further.

Takada Hasshou’s interior features a counter made from a single slab of gingko wood and seats eight. There is also a private room that seats four. The counter seats are positioned close enough to enjoy a conversation with the mild-mannered Mr. Otake, a perfect atmosphere for a cheerful dining experience with friends or a lover.
