A trio of veteran chef, patissier, and sommelier deliver in harmony a beautiful French symphony.

3 minutes from Akabanebashi Station, in the center of Tokyo's Megalopolis, on the 2nd floor of a backstreet building, awaits 'Restaurant L'aube and its world gourmet guide award. A reunion project of former chef Hideaki Imahashi, patissier Shoko Hirase, and sommelier Hiroshi Ishida of Harajuku's 'Keisuke Matsushima', 'L'aube' opened its doors in 2016. The three are all giants of their field; chef Imahashi and patissier Hirase were trained in Paris and Nice, hot-spots in French cuisine, and sommelier Ishida is a former Japanese sommelier contest-champion and a decorated veteran of awards across the globe. This tri-ni-set comes together to produce a harmony of 'L'aube', or 'dawn', of 'birth'.

Both lunch and dinner offers courses of 5-7 layers. Chef Imahashi, drawing on his past as a farming chef, concocts a course centered on Kamakura vegetables grown on sea-side, nutrient-rich soil. Coupled with fresh-caught fish from Kyushu's Amakusa, and the finest selected meats from both Japan and abroad, 'L'aube' serves a classical yet visionary French cuisine.

Patissier Hirase too showcases her craft; from live slicing of oven-fresh loaves of bread at your table-side, to delicate sweets served in exquisite jewelry boxes, 'Laube' brings an exciting approach to presentation sure to make your hear dance.

Wines selected from new and old world alike, from France but also South Africa, the Americas, Georgia, and others, line 'L'aube''s impressive cellar. From this selection sommelier Ishida proposes wine-pairing options tailored to each guest.

The dining hall, with 24 seats, is illuminated through walls lined with lighting reminiscent of champagne bubbles. The ornate, Möbius strip-themed centerpiece at each table is similarly striking. The hall offers not just a luminescent mood; from the dining guests can gaze into the kitchen, and watch the masters of foods and pastries spin their craft.

'L'aube' is thoroughly guests-first; with a balanced sense of distancing, they will deliver every time on orchestrating incredible symphonies for your most cherished anniversaries.     約5年ぶりの来店でしたが、前回にも増して満足致しました。お料理も一品一品丁寧な作りとみためだけではなく素材を活かし、素材の組み合わせも見事で、お腹いっぱいと言いながら飽きのない味にペロリと食べてしまいました。サーブも丁寧な説明はもちろんこちらの会話にも応じて頂き楽しいひと時を過ごせました。ワインのチョイスもさすがという感じで、定番の売れ筋のものというわけでなく、本当にお料理に合わせた素晴らしいマリアージュでした。それなりの対価ではありますが、もっと上でもいいくらいの感じがしました。デザートは言うまでもなく素晴らしい数々でした。本当に素晴らしい時間を過ごすことができました。ありがとうございました!
