Bites that Amplify Your Health and Beauty; French Inspired Creative Japanese Cuisine 'Wa'

It may have been destiny that the health-and-beauty themed 'Wa' opened its doors where it did; Nishiazabu, a Tokyo locale renowned for its density of star-studded restaurants. At its location, 7 minutes removed on foot from Hiroo station, it awaits those that have grown all too familiar with ultra-fine dining with a different proposition.
Chef Shinichiro Wakamatsu, with a resume full of Tokyo's big-name restaurants like 'Orangerie Du Paris', 'Hibiya Palace', and 'Maison Premiere At Robbin's', is well regarded for his health and beauty focused menus. He partners at 'Wa' with Cuisine Director Nobuhiro Okano, a specialist regarding healthy fine dining and a protege of the late French 3-starred 'La Cote d'Or' chef Bernard Loiseau; since returning to Japan, chef Okano has compiled much experience cooking exclusively for renowned professional athletes as well.
'Wa' is a course-only location, with menus structured around 'stress-free dining'. All dishes use familiar local Japanese ingredients of the season, prepared avoiding excessive seasoning and infusing French essences into innately Japanese tastes. From the salad, where greens commonly provided fresh are served lightly heated and creamed like a soup, and throughout the course, all dishes are presented in a manner so as to maximize nutritional intake. The dishes chef Okano conjures have a constant in the Japanese concept of 'subtraction' regarding food; the courses at 'Wa' are concocted using minimally necessary methods, to produce results that are maximally affective.
'Wa''s sake selection is courtesy of Niigata prefecture's Kanese specialty sake shop. The staff chooses from over 50 bottles the taste most befitting the season and menu. Their tableware, tasked with enlivening the dishes served atop, are selected by the interior and architecture magazine staple Asano Geijutsu Inc. from over 150 different domestic brands, and are unique to every course in order to enhance the 'Wa' culinary worldview.
