'Wa' is a course-only location, with menus structured around 'stress-free dining'. All dishes use familiar local Japanese ingredients of the season, prepared avoiding excessive seasoning and infusing French essences into innately Japanese tastes. From the salad, where greens commonly provided fresh are served lightly heated and creamed like a soup, and throughout the course, all dishes are presented in a manner so as to maximize nutritional intake. 'Wa''s sake selection is courtesy of Niigata prefecture's Kanese specialty sake shop. The staff chooses from over 50 bottles the taste most befitting the season and menu. Their tableware, tasked with enlivening the dishes served atop, are selected by the interior and architecture magazine staple Asano Geijutsu Inc. from over 150 different domestic brands, and are unique to every course in order to enhance the 'Wa' culinary worldview.
