Sapporo’s Maruyama area is a town with a quiet, elegant atmosphere. Standing along a peaceful lane is a Japanese restaurant ""Taku Maruyama."" Since opening in 2009 it has been endorsed by gourmet guests, and in 2017 it received one world gourmet guide award, showing its strength as a Japanese restaurant.
Chef Hayato Wada comes from Okushiri Island, known for being a treasure trove of ingredients in Hokkaido. To share the delicious ingredients of his childhood with his guests, he includes many seasonal specialties in the menu, such as Okushiri Island’s wild plants, mushrooms, and sea urchin. Additionally, he conveys the abundance of ingredients to be found in this region by procuring vegetables from farms around the outskirts of Sapporo and buying only fresh Hokkaido seafood from a local brokerage every day.
The 10-dish banquet course meal, overflowing with fresh seasonal ingredients, is particularly popular. The chef is meticulous about his stock, using 2 types of kombu from Rausu and Osatsube as well as bonito flakes to carefully take the stock before adding subtle flavoring. While the stock appears elegant and pale, it has a thick umami and sweetness which act as a linchpin to support the flavors of the dishes. The guests are particularly fond of the sushi which combines red vinegared rice and fresh seafood and ties together the course meal. The selection of wine is extensive and includes many labels from Hokkaido and Okushiri.
""Taku Maruyama"" is located in a renovated home built more than 50 years ago. Its stylish impression is given by its uniform whiteness, connoting the snows of Hokkaido. Consisting of 7 counter and table seats and a semi-private room (6 seats), it is perfect for anniversaries and business entertainment. This famous northern restaurant allows you to experience the abundance of Hokkaido and the craft of a Japanese master in a relaxed atmosphere. It is certainly worth a visit.
