The tuna, red vinegar, and rice are all meticulously chosen—frankly, these are the only words which can be used to describe "Sushi Tokami". Each morning, making their way to the fish market to obtain the remarkably flavorful, top grade, domestic, natural Pacific bluefin tuna offered by Tsukiji broker "Yamayuki". For red vinegar, Yokoi brewed vinegar Yohēi is used, for its flavor and umami which well suit the tuna. For rice, large-grained "Haenuki" Tanada rice from Yamagata Prefecture is used, for its high mineral content. Additionally, the restaurant goes so far as to contract a specialist to polish the rice, so as not to lose the umami contained between the rice hull and the grain.
The specialty dish is hand-rolled sushi with bluefin "Tossaki" is the part of the tuna which joins the head to the body, and, like the tail, it is a part that moves a lot and so has plenty of flavors. By hand-rolling this part with rich red vinegar rice and aromatic nori, the chef creates a delicacy which represents the true nature of natural bluefin tuna.
"Sushi Tokami" is located in a building which sits a stones-throw away from the hustle and bustle of Ginza—a refined getaway, unlike most street-facing restaurants. The relaxed interior has 10 counter seats, which play host to diners, business entertainers, couples, and from time to time even overseas visitors. "I want people to enjoy their meals," says , and so they do—laughter can always be heard coming from the doors of "Sushi Tokami". In addition to limited seasonal Japanese sake, white wine such as "Montrachet" and "Meursault" and Champagne such as "Krug" offers a comfortable level of intoxication.
