Nihonbashi, Tokyo—a place that has thrived as a castle town from the Edo period, and still to this day has trails from those days here and there. “Sushi Kimura” opened in 2018, in a popular area with a lot of atmospheres. 4 minutes on foot from the Tokyo Metro Suitengumae Station, it quietly lies on a street turned off from the main road.

The owner-chef, Mr. Koji Kimura became independent and opened his restaurant in Nihonbashi after working in a sushi restaurant in New York for 10 years, and practicing under a well-known sushi restaurant in Tokyo. The seafood is direct from the Aomori prefecture, where Mr. Kimura’s hometown belongs to. Being able to enjoy the freshest fish is a rare find in Tokyo. The delicately flavored vinegared rice made from salt, red vinegar made from fermented sake lees, and Koshihikari rice from the Yamagata prefecture, bring out the flavors of the finest sushi toppings. Mr. Kimura’s competent skills backed with his thoroughness, are steadily raising the restaurant’s popularity amongst sushi lovers in Tokyo. The teacups and sake vessels are all fine pieces ordered from directly visiting vessel craftsmen in Kyushu, and play a role in bringing out the flavors of the food and creating the restaurant’s soft atmosphere. Around 8 different types of Japanese sake, that pair perfectly with sushi, are always available, including a couple of seasonal ones.

Starting with the counter made of a single plate of pure white cedar, the interior that is simply put together using a lot of wood creates a calm atmosphere for guests to enjoy their exquisite meal. 9 counter seats are offered for those who wish to enjoy Mr. Kimura’s sushi making right in front of their eyes. Mr. Kimura who has a lot of experience overseas is proficient in English and can explain about the fish to guests from abroad. “I am aiming for a restaurant in which guests say that they can confidently bring along important people,” he remarks, and at his hands, there is no doubt “Sushi Kimura” will be a perfect choice for receptions, anniversaries, and important dinners with clients. We would like you to enjoy an exquisite moment created by a location and atmosphere that allows you to feel Japan’s air and culture, and an owner who also has international experience from New York.

    Best sushi experience we've ever had! The food was exquisite, the atmosphere was so peaceful and intimate, it was a joy watching the chefs prepare each course. Chef kindly explained every dish through the journey, all staff were friendly and attentive, making us feel most welcome. Arigatou gozaimasu!
