Dry-aging beef “Bistecca” at an Italian restaurant in Ginza

“Bisteccheria Enoteca Il Moro” moved from Higashi Ginza to Ginza 2-chome in 2018. It is an Italian restaurant specializing in the beef dish “Bistecca,” which is representative of Florence in the region of Tuscany, Italy.

Bistecca is an Italian beef steak. Chef Noboru Takai skillfully uses high-grade Bincho charcoal and firewood to grill Bistecca. The “Bistecca Alla Fiorentina” (Florence-style T-bone steak with bone) shows his true merit. He uses a rare brand of “Certified Angus Beef” that is soft with the rich umami of red meat. Proper temperature and humidity are maintained in a dedicated aging room, making adjustments to the aging period according to season and climate in order to finish with the highest grade flavor. With pasta and desserts, dishes are selected that allow for more enjoyment of the season. Sweetfish is procured from the Tenryu River in Nagano in early summer, Italian summer truffles are used, all so that a more impressive orthodox Italian cuisine can be produced.

Chef Takai’s foundations as a chef lie in the journey to Italy he made during his 25th year in pursuit of knowledge. His time studying at restaurants such as Milan’s “Innocenti Evazioni” (now Michelin 1-star) and “Dorada” nestled in the mountains of Veneto (Michelin 2-star at the time) are his precious assets. Even now, challenging himself in cheesemaking is a testimony that the artisan’s soul he cultivated in Italy is still quietly burning. We would like you to taste our Bistecca, infused with passion, to your heart’s content in the neat and tidy blue and white interior of our restaurant. Along with over 250 varieties of wine from Italy, the paintings of Arnaldo Pomodoro, an artist representative of contemporary Italy, decorate the walls.
