Karuizawa hideaway offers a seasonal course

Located in a wooded area that is a well-known spot for high-class villas in Karuizawa, you can find “Hermitage de Tamura,” a French restaurant situated in a single house surrounded by trees and greenery. The name of the restaurant is taken from the French word “Hermitage,” which refers to a secluded hideaway. This perfectly describes the distant, otherworldly atmosphere the restaurant offers its guests.

It was originally opened in 2000 by Chef Yoshio Tamura, and after gaining substantial acclaim around Karuizawa, the restaurant was handed over in 2017 to his pupil, Chef Otsuka Tetsuya. He spent 3 years working at the restaurant “Mushroom” in Ebisu before he started to get interested in the idea of working in a restaurant that was close to the earth and surrounded by nature. This, of course, led him to start training under Chef Tamura at "Hermitage de Tamura". As the inheritor of a highly reputable establishment, Chef Otsuka has to take the restaurant to even higher acclaim by holding onto his teacher’s original flavors while also taking the opportunity to make revisions wherever necessary.

The restaurant is tucked away in a natural setting and features top quality dishes prepared with the very best that seasonal ingredients have to offer, all of which has gone a long way to gain attention from gourmands. Guests at the restaurant can enjoy highly original dishes that take advantage of amazingly delicious ingredients picked up from local farms and all across the country when the timing is right. From June to September guests can enjoy their “Cold Peach Soup,” a summertime specialty that takes ripe peaches and consomme to build a clear, crisp flavor highlighted with the taste of peaches. If necessary they search up and down the country to chase fresh peaches that have the perfect level of ripeness to pull off this dish. And, they throw their fresh peaches in the blender right as they prepare the dish in order to maximize flavor and maintain fresh peach aroma. They ensure that no corners are cut when it comes to the masterful preparation that an exquisite dish like this requires. There are also two sommeliers on staff that offer guests a selection of wine that mainly consists of French varieties, along with local wines from Nagano as well.

When the restaurant was passed down, there were a few changes made as well. The chef reexamined the restaurant’s workflow and put in time and effort to ensure everything was at its best. “Hermitage de Tamura” has table seating with 23 seat total, as well as 2 private dining rooms that can each seat up to 4 to 5 guests. These private rooms were among the new renovations the restaurant embarked on in 2018. The dishware has also been selectively replaced with simple, elegant items that further enhance each meal. In addition to that, the staff prioritizes teamwork and makes sure everyone has a hospitable dining experience all around. This renowned restaurant carries its traditional roots along with new improvements in both flavor and hospitality. Guests will find themselves wanting to visit throughout the year to savor each seasonal offerings.
