A 1-star fashionable Hakata cuisine produces a fun time

Located a 5-minute drive from the downtown area of Fukuoka, "Shirogane Nishida" is a traditional Japanese cuisine restaurant with an endless supply of guests who go out of their way to visit. The owner, "Shingo Nishida," is a native of Fukuoka Prefecture. He returned home after training at Kyoto-style cuisine restaurant "Yugyoan Tankuma Kitamise," improved his skills at the legendary "Teshimatei," and became the head chef at "Hakata Mizutaki Toriden". Later, he also participated in the launch of the "Nakashimacho Club," which draws from the tradition of Teshimatei, and got his opportunity to set up on his own in 2014.

Mr. Nishida says, "It is important for a restaurant to not only be delicious but to offer a fun and impressive space." Wanting his guests to be able to watch the food being prepared while enjoying conversation across the counter, the seating and the kitchen was designed to be at the same height. Furthermore, so as to be able to communicate with guests in the private room, he makes a point of properly greeting guests at the beginning and the end of their visit. The cuisine naturally incorporates a sense of the season but is also centered around ingredients that allow guests to enjoy what is uniquely stylish and special about Japanese cuisine. For example, for the summer specialty, whole deep-fried sweetfish, the backbone is removed and replaced with a skewer, with the sweetfish remaining intact and deep-fried as if it is swimming. Sakura shrimp, which are in the season twice a year in the spring and fall, are minced and wrapped in seasonal vegetables, and served in an easy to manage style, like fried fish balls. Because the guest can enjoy the temperature, texture, fragrance etc. of the freshly prepared dishes with all of their senses, the hand-delivered presentation also tickles their curiosity. And in order to accommodate the tastes of guests visiting from all over the country, famous Japanese sake brands from every part of Japan are available, as well as a wide range of Japanese wine and champagne.

The interior decoration was designed by Shinichi Nakamori, a space designer based in Fukuoka. The disconnect between the pure Japanese style of the interior and the novelty of the cuisine also creates a unique personality. There are 8 seats at the counter and 2 tatami rooms with seating for up to 12 people. Guests are invited not only for entertaining or anniversaries but also during lunchtime hours with friends or for business lunches.
