1-star French Restaurant Banquet is located in a quiet residential area somewhat away from the city center, 10-minute walk from Nishi-18chome Station in Sapporo, Hokkaido. Hokkaido-born the owner-chef Kohei Wakasugi trained in 1-star restaurant Vivarois in Paris before moving on to 3-star restaurant Guerard in Landes, where he refined his skills further in his position as the chef in charge of fish dishes. He then gained experience in numerous starred restaurants before going independent. Chef Wakasugi is a talented player in the world of French cuisine, with achievements such as coming runner-up in 2002 in the All Japan French Food Contest, presented by the French Food Culture Center (FFCC).

For Chef Wakasugi, it is important to be a high-quality “petit maison,” an intimate restaurant where he can interact with each customer individually and have them enjoy the best of French cuisine with roots in the local area. He incorporates the rich range of ingredients—agricultural produce, livestock products, and seafood—offered by Hokkaido’s blessed natural environment into all of his dishes. The French cuisine that can only be enjoyed in Banquet comes into being through a combination of 3 ingredients with the techniques that Chef Wakasugi acquired in France. Each and every dish is finished by carefully attending to the various details that are involved to create a result that is a supreme dish, unique to the day on which it is served. In particular, Chef Wakasugi signature dish is Blue Lobster: a Homage to Michel Guerard, which is created using the finest blue lobster. The dish expresses his warm sentiments for Michel Guerard and is a masterpiece that every customer must try. In the fall, we recommend the varied dishes created from deer, the game that Chef Wakasugi commissions local hunters to hunt. Wine on offer is the focus on a selection of French and Hokkaido vintages that go well with Chef Wakasugi’s cuisine.

French Restaurant Banquet offers a limited of 1 table seating (up to 8 people) and a private room (up to 6 people) a day. Sitting at the tables, customers can view the chef cooking and also enjoy how the food is being prepared.
