In a spot near the Nishi-Azabu intersection in Roppongi, Tokyo is a restaurant called ""FERMiNTXO"". Despite the casual atmosphere, it is a place that offers Spanish cuisine made with no cut corners and the opportunity to experience the complexities of Spanish wine.
The owner-chef, Shinya Sakumoto built his skills at a number of world gourmet guide awarded restaurants such as ""Restaurante Alameda,"" ""Fonda Sala,"" ""Restaurante Neichel,"" and ""El raco de Can Fabes"". Upon returning to Japan, he opened a restaurant in his hometown Ishikawa prefecture and opened ""FERMiNTXO"" in 2011.
Chef Sakumoto is particular about vegetables and uses Ishikawa produce grown at the ""Taka Nouen"" and ""Nishida Nouen farms"". Robust, healthy vegetables are grown in soil enriched using vegetable chips and green manure without chemical fertilizers or pesticides and grass instead of mulch. The skins of the potatoes are particularly beautiful and taste good as well. For example, the ""Galicia-style Octopus"" uses a puréed potato relish that highlights the flavor of the potato; all of the dishes are authentic Spanish recipes that highlight the Japanese ingredients. Sherries chosen by a 'venenciador' (a sherry expert) and red and white wine carefully chosen by a sommelier are on offer as well, with over 300 types of wine and 50 types of sherries. Chef Sakumoto has personally visited the ""Finca San Blas"" winery in Requena, Valencia to create original wine. The dedication is beyond what you would normally encounter. Advice on sherry for before, during, and after the meal is provided, with venenciador-chosen sherries that ""FERMiNTXO"" prides itself on the offering. There are also a variety of cheeses, raw hams, and salamis from all across Spain to match with wine.
""FERMiNTXO"" offers counter seats, sofas, tables, and a private room for up to 16 guests. Families with children are permitted on Saturdays. From light meals to commemorative dinners, business dinners or receptions, ""FERMiNTXO"" will meet the needs of guests.
