Edomae-sushi pouring the heart into every dish served

The Shinohashi area in Shirokane is a quiet residential area filled with luxury housing and famous restaurants, and it is here that "Sushi Shoryu" set up shop back in 2014. The owner-chef, Takanori Tajima began training as a chef at the age of 18, spending 12 years honing his skills at "Sennari Sushi" in Gifu before moving to Tokyo. There, he continued to accumulate experience in various sushi restaurants around the city, before establishing his own restaurant in the relaxing surroundings of Shirokane.

Chef Takanori wants his customers to be able to savor Tokyo-style sushi enjoyably in an informal atmosphere. From the tuna procured from "Yamayuki" at Tsukiji Market, to tender steamed abalone, and glass shrimp marinated with kelp, Chef Takanori puts every effort into delighting diners with the best ingredients in each of the seasons. In particular, the tuna that Takanori prefers to use appears in his Omakase(chef's selection) course in a variety of guises. Even for the ingredients that are available all year, Chef Takanori strives to purchase the best quality products at that moment so that he can serve delectable seafood delights that are in the optimum condition. The vinegared rice for the sushi is made with three kinds of red vinegar made with sake lees blended together with rice vinegar. To enhance guests' meals further, side dishes such as sea urchin also make an appearance from time to time. There is also a selection of around 70 Japanese sake to accompany the sushi, as well as a special beer brewed exclusively for the restaurant by Niigata Beer, which is particularly recommended. Since it is brewed to go well with the special blend of vinegar and rice used in the sushi, the beer is a perfect match for sushi, opening up an exciting new world of possibilities.

The restaurant itself is comprised of just 9 seats at the counter. Chef Takanori's keen aesthetic can also be appreciated in the bespoke Mino-ware tableware that dishes are served on. Above all, Takanori just wants customers to relax and enjoy the sushi, and so he welcomes conversation across the counter. Whether dining with family, friends or a sweetheart, diners are sure to completely satisfied with the warm service and wonderful sushi.

    いつも美味しいお鮨をありがとうございます。 あまり好みを言わない妻が「龍尚さんがいちばん好き」と言います。もちろん僕も好きです。 酢飯とワサビのバランスが好みで。 マグロの漬け、最高でした。
