The restaurant puts particularly great effort into its house specialty, dashi-shabu, an original dish that came into being when ""Kyoto Hyoto"" first opened for business. Thinly sliced Wagyu Kobe beef, Wagyu Matsuzaka beef, or Hakkinton pork are added to a specially made stock born from the techniques of Japanese cuisine and based on a stock made of kelp and bonito flakes to create shabu-shabu, which is eaten with generous amounts of green onion. The fragrant flavor of the dashi stock is coupled with the sweetness and tastiness of the meat.
