"Paul Bocuse" is a world-class French restaurant in Lyon, France that has maintained a Michelin 3-star rating in cuisine guidebooks around the world for more than 50 years. The only other restaurants in the world that carry on the cuisine of legendary chef Paul Bocuse are "Maison Paul Bocuse" in Daikanyama, Tokyo and "Jardin Paul Bocuse" in Kanazawa, Ishikawa. "Jardin Paul Bocuse," the head restaurant in Japan, has stood calmly in Shiinoki Cultural Complex at the center of the ancient city of Kanazawa, surrounded by the blessings of the sea and the mountains, since 2010.
In addition to the specialties passed down from the head restaurant in Lyon, at "Jardin Paul Bocuse," you can enjoy first-rate French cuisine overflowing in the sense of the seasons, made using the natural blessings of Ishikawa. They want their guests to experience a taste of Lyon through the traditional cuisine that has been loved for many years, including the truffle soup served to V.G.E. at Elysee Palace in 1975, sea bass in pastry with Sauce Choron and the fillet of beef Rossini with Sauce Périgueux. The brick building has been standing since the Taisho period and portrays the traditional cultural materials and motifs of Kanazawa through gilding and Yukitsuri across the exterior. It is protected by a tree known as the "Temple-shaped Chinquapin," a nationally designated natural monument said to be 300 years old. The reverse side is an all-glass surface through which you can see the rich greenery and wide stone walls of Kenroku-en and Kanazawa Castle Park. The design of this space allows guests to feel the vibrancy of the ancient city of Kanazawa and the atmosphere of France, closely resembling the spirit of French cuisine, which respects culture while also respecting tradition. The main dining hall seats 50, and there are two private rooms that seat 30 guests between them, so feel free to ask about them when making a reservation. Menus in Chinese, French, and English are provided to cater to guest from overseas.
