world gourmet guide award Japanese cuisine restaurant ""Ryoriya So"" is located on the Maruyama Park side of Sapporo City, Hokkaido. Keeping true to the restaurant name, the Owner Mr. Takashi Anezaki treats his guests to ""cuisine that makes the most out of the deliciousness of raw ingredients"".
Mr. Anezaki was born and raised in Hokkaido. After training for 9 years in Kyoto and 4 years in Kagawa, he returned to Hokkaido and opened ""Ryoriya So"" in Sapporo in 2005. Its motto - To use the best ingredients of the day no matter what. Personally picking mushrooms and mountain vegetables from the mountains and combining them with pesticide-free vegetables purchased from local farmers, Mr. Anezaki assembles the menu for the day, producing food through which diners can ""taste the deliciousness of the raw ingredients"". For ""Ryoriya So"", 2 other important keywords are ""seasons"" and ""customer preferences"".
Every season, Mr. Anezaki picks and chooses ingredients from different regions depending on where his guests hail from, and their preferences - allowing guests from Honshu to sample local terroir, while providing local guests with a taste of Honshu ingredients. During the game season from autumn to winter, the venison yu-tofu, grilled venison and other dishes that feature the meat of the Ezo deer receive great reviews. As for Japanese sake to go with the food, in addition to the classics such as Horai from Gifu and Suigei from Kochi, we have also prepared a variety of different types of Japanese sake from all over the country, that will go with any kind of food. The tableware and liquor are all artisanal pieces, serving as an excellent foil to the food and sake.
""Ryoriya So"" is located in an old but renovated the freestanding building, with a modern atmosphere. The interior of the restaurant is completely Japanese-style, with 5 counter seats and private rooms accommodating 4-10 people. Reservations for a party of more than 4 may book the entire premises. Children are welcome, making ""Ryoriya So"" a great venue for family gatherings and kids' birthdays. In winter, a private chef service that serves the Niseko region is also available, so please contact us if you would like to enjoy fine dining in the comfort of your resort.
