Neo-classical French cuisine created with Hokkaido ingredients

"obtenir K" is located on the 5th floor of a building in the center of Sapporo, 5- minute walk from the station. Owner-chef Keisuke Fujiya was born into a fisherman’s family in Esashi, Hokkaido and trained in Tokyo and France. After working as the second chef at "Banquet" in Sapporo, he went on to work as the chef at the long-established Sapporo restaurant "Cote d’Or". At age 34, he went independent, opening his own place in 2017. He gave it the name "obtenir", which means “to create”, or “to turn out” in French.

Using ingredients grown in the vast open spaces of Hokkaido, Chef Fujiya pursues a neo-classical style that makes the most of new techniques while also respecting the traditions of French cuisine. Among these classical dishes, one that Fujiya is especially good at, and that he also likes, is Chausson, or pies. He uses seasonal ingredients—Oriental turtle dove, a game bird that is in season in the summer in Hokkaido; Ezo sika deer; cod milt; and abalone—bringing the delicious flavors of traditional French food into the contemporary age. With a tight composition and vivid colors, Chef Fujiya’s dishes allows customers to enjoy courses that are condensation of what’s in season in Hokkaido. Wine selected by sommelier Takuya Takahashi put together the story of the food. Bottles from Burgundy, France account for 90% percent of the wine list. "obtenir K" also stocks natural wine created mainly by traditional makers.

The restaurant interior takes white as its keynote color and has a modern feel. The first thing that you will notice entering "obtenir K" is the open kitchen with Chef Fujitani standing in it. An elegant dining space awaits customers in the rear. Ceramics produced in Arita and goods from overseas create a space that is out of the ordinary. "obtenir K" has seating for 5 at the counter, 18 at the tables, and a private room for 4–6. The restaurant provides meticulous service, with English-language menus and service, desserts for anniversaries, and so on. In addition, the private room is available for use by customers with children, making it very convenient for special occasions. "obtenir K" is a quality restaurant that will add an extra element of fun to your visit to Hokkaido.

    少し早目のクリスマスの食事をしました。 お料理は勿論ですが、食器類も素敵でした。 目でも楽しめ、スタッフの皆さんも気持ちよく接して頂きました。 可愛らしい模様付きのスプーン…、どちらの物か聞き忘れてしまいました。 2人で、また何かの機会に来店したいと話しています。 ありがとうございました。
