A world gourmet guide award Japanese restaurant that brings out the best of Toyama

On a quiet corner in the back streets of downtown Toyama, a sign with glowing light leads you to the Japanese restaurant Fukuya. In this secluded location, they serve relaxing, high quality meals made with local Toyama ingredients. It has received world gourmet guide award.

Owner-chef Joji Oya worked at Nishiazabu’s Kasumicho Suetomi (now closed), and then spent six and a half years helping at his family’s soba restaurant before going independent. He opened Fukuya in 2015.

Owner-chef Oya has a predilection for ingredients from his hometown Toyama. 80% of the ingredients he uses are from Toyama, including fresh seafood caught in Toyama Bay, which his known as one of Japan’s foremost fishing grounds. He also expands his cuisine by sourcing special ingredients like organic vegetables and local game meats through his connections with the vendors. Taking advantage of Toyama’s many natural blessings, owner-chef Oya even serves mushrooms picked by himself, these uniqueness makes the appealing part of Fukuya.

The 10-dish menu starts from appetizer to dessert, with other dishes recommended by the chef. With his cooking, Oya aims to provide “food that calms the mind and provides energy for tomorrow.” In order to do so, he avoids excessive seasoning, brings out the best in the ingredients and makes the most of each ingredient.

Without over exaggeration and paying attention to overall balance, guests will not loose their appetites during the beautiful meal. There are 13-15 varieties of sake available, mainly from local brands in Toyama. The sake collection are light and refined, in order to taking over the tastes of the cuisine. The wines are also lighter style, and are selected to pair with Fukuya’s dishes.
For seating, there is a counter for 8 guests as well as tables, and it can be reserved for private parties with up to 20 guests.

There are also private rooms available for families with children. Furthermore, on the third floor of the same building, a banquet space can accommodate 30-35 people. (With additional charges)

It is a place for special occasions like family celebrations and birthdays, or as a special treat for oneself. With the elegant atmosphere in Fukuya, please enjoy essential excellence of Japanese cuisine.

    昨日は お世話になりました。全てにおいて大変お気遣いが行き届いておりましたので 安心して 食事を楽しめました。アマダイのから揚げと鯛?ワサビで頂いたお刺身がとてもおいしかったです。からすみも優しいお味で すべて 大将のやさしい人柄がにじみ出た美味しさでした。 主人と二人でゆっくり会話も楽しめて本当に良かったです。 是非 今度は カウンターで 楽しみたいです。 ありがとうございました。

    本当に美味しいお料理をありがとうございました。 素晴らしい富山の夜になりました。 それと帰りに分けて頂いたレトルトのお料理、とっても 美味しかったです。 特にご自分で謙遜しておられた「迷走カレー」は最高でした。 豚丼も流石料理人と思わせる出汁の味。 是非商品化が軌道に乗ることを祈っています。
