Located on one corner of the Shirogane Intersection, about 7-minute on foot from Kanazawa Station in Ishikawa Prefecture,"" Restaurant N"" has a stylish, eye-catching exterior. The eatery's reputation has grown since it was awarded a star by a certain restaurant guide. Today, it attracts gourmands in droves not only from its hometown but also from beyond Ishikawa Prefecture.
Chef Shoji Nishiyama previously served as Head Chef at The House Montriche, a French restaurant in a house-style building in Toyama, as well as in the main dining room at The Windsor Hotel Toya Resort and Spa in Hokkaido. He then became Head Chef at Anniversary Restaurant Beige, the predecessor of his current restaurant, which he took over in 2015 and renamed ""Restaurant N."" The ""N"" stands for ""Nishiyama,"" ""nature,"" and ""nouveau.""
""Restaurant N"" does not have a traditional menu with a list of items. ""I want our guests to enjoy the best ingredients—like fresh vegetables sourced directly from producers around the country, such as Takano-en from Notojima, Ishikawa, as well as fresh fish like black throat seaperch from that morning's catch at the Kanazawa fishing harbor, and meat from Hokkaido, Iwate, Ibaraki, and Aichi—at the absolute height of their goodness on that very day,"" says Chef Nishiyama of the idea behind this unique approach. Hidden-gem ingredients that Chef Nishiyama has personally discovered on visits to producers are prepared with grace, and never overworked. As a result, guests at ""Restaurant N"" have the opportunity to savor dishes that, thanks to Chef Nishiyama's considerable culinary skills, invariably draw out the full potential of their ingredients. The wine list, meanwhile, is headlined by French and Japanese natural wine that strikes a delightful balance when paired with the food here.
Restaurant N's closeness to producers extends beyond the realm of ingredients. The culinary experience here is further enhanced by tableware that conveys the warmth of wood and other natural materials. This includes the haute couture soft- and hard-paste porcelain and knife rest that the restaurant has commissioned from artisans from the Hokuriku region. Table seating (12 seats) and private rooms (for 4–10) are available. Restaurant N is both a place for local families, friends, coworkers, and more to relax and dine and a gastronomic destination for tourists from Japan and beyond.
