About ten-minute walk from Fukuyama Station in the eastern part of Hiroshima Prefecture, a short distance from the shopping district, “Chinese Cuisine Renka” is located along a quiet street in the neighborhood of a park and kindergarten. The owner-chef Rintaro Ogawa cooks the best ingredients of the day and serves simply in the best way.
Owner-chef Ogawa is from Fukuyama City, Hiroshima Prefecture. When he was in high school, he wanted to become a chef and he encountered the Japan-China Friendship Association, and after graduation he went to China. He learned Cantonese cuisine in the kitchen of a hotel in Guangzhou City for half a year, and after returning to Japan, he trained for 12 years in Yuraiken, a major Chinese restaurant in Fukuyama. Later, he became independent and opened 蓮花(Renka). In addition, in order to secure a space where you can cook as you like, the restaurant was relocated and renamed 蓮華(Renka) in 2007. It has become a restaurant that is introduced in the world-renown gourmet guide.
Chinese Cuisine Renka is really a maniac restaurant. There is no fixed menu, only omakase course by Chef Ogawa. The menu only has a brief description on the ingredients of the day (seafood includes sea bream, sea bass, flounder, meat includes duck, acorn black pork, deer, etc., and vegetable includes bok-choy, bamboo shoot, yellow chive, Chinese arrowhead, etc.) and the recipe (stir-fried seasonal vegetables in soup, stir-fried seafood and vegetables, black vinegar sauce for meat, etc.). "If you request the main ingredients and how to taste them, we will provide the best cuisine for you. So to speak, improvisation. There will never be the same thing again," says owner-chef Ogawa.
Vegetables are purchased from Kajitani Farm in Mihara, Kodawari Farm with organically grown in Kamiishikogen-cho, Mitsuboshi Seika Midori in Fukuyama, etc. Seafood from Shimada Sengyo and pork from Nakai Seiniku Shokai, both in Fukuyama, and chicken from Nakabayashi Chicken Shop in Fuchu, are all sourced from reliable local producers and traders. The seasonings used are kept to a minimum, no garlic or sesame oil is used, no decoration is used, and the original taste of carefully selected ingredients is not spoiled, and finished simply. The drink menu is overwhelmingly rich in Chinese tea. There are over 20 kinds of tea such as green tea, white tea, yellow tea, dark tea, black tea, etc., and they are selected according to the season and diner’s physical condition. In addition, instead of pairing with each dish, it is a style that you can enjoy with the change of expression of Chinese tea where the intensity peaks in the middle of the meal to match with the course composition of Chinese cuisine, where the main dish comes in the middle. The restaurant also has beer, Shaoxing rice wine, shochu, Japanese sake and wine available.
The restaurant has 4 counter seats and tables (6 people for round table, 12 people for table). Owner-chef Ogawa says, "Eating is a tool that creates a get-together and conversation.
