Tempura restaurant “Tenyoshi” is located in Yoshijima-cho, about 5 minutes by car, south of the Peace Memorial Park in the center of Hiroshima City. You will be welcomed by the chef Masahiro Ishihiro and the proprietress as you pass through the “noren” (shop curtain). The restaurant’s name, “Tenyoshi”, is derived from the word “tempura” and the town’s name, Yoshijima. It is a popular restaurant loved by locals.
Chef Ishihiro trained at Japanese restaurants in his hometown of Hiroshima, as well as at sushi and soba restaurants. He decided to open a tempura restaurant because there are not many opportunities for people to make tempura at home and there are only a few restaurants specializing in tempura in Hiroshima. He visited famous restaurants in various places around Japan, self-learned the technique of making tempura, and opened “Tenyoshi” in February, 2015.
The tempura at “Tenyoshi” is fried in a
rapeseed oil and a thin, delicate batter is used so that the true flavor of the ingredients can be enjoyed. “You can enjoy freshly made tempura one piece at a time. You can enjoy not only seafood, but also vegetable tempura. I want to dispel the image that tempura is heavy”, says chef Ishihiro. He is particular about the ingredients, and the seafood is sourced from “Yoshibun” at Hiroshima Central Wholesale Market, which has a nationwide network. The vegetables are ordered directly from reliable producers and grocers. The vegetables are selected so that diners can enjoy seasonal ingredients. The “Omakase Course” is a combination of simple tempura and the chef’s original tempura to ensure that visitors can enjoy a variety of dishes.
Drinks are selected by the proprietress who is a licensed sake taster. In addition to sake from Hiroshima and other parts of Japan, the restaurant also focuses on wine. They have around 30 types of champagne and 50 types of white and red wine mainly from Bourgogne.
There are 5 counter seats, tables, and a private room for 4 people. In addition to the calm interior, the restaurant also uses “Miyajima’s Osuna pottery”, from Hatsukaichi, Hiroshima Prefecture, on which the tempura is served, allowing visitors from outside of the prefecture or overseas to feel the true sense of Hiroshima.
