Owner-chef Masuki, who was born in Hiroshima, decided to become a chef specializing in Chinese cuisine, after working with Chinese vegetables at his parent's vegetable store. For several months, he studied authentic Chinese food at a Chinese restaurant in Chinatown, Yokohama, and in Beijing. At the "China Room" in the Grand Hyatt Tokyo, he worked with Yusuke Yamaguchi, who later opened the "Jasmine Yi Jiang Nan." After honing his skills at other famous Chinese restaurants, he returned to his hometown, and went independent after working with various cuisines in the kitchens of several restaurants. He opened "Chinese Cuisine MASUKI" in 2015. It became a popular restaurant and has been introduced in a world-famous gourmet book, with dishes being prepared with stoicism.
In Chef Masuki's words, "I've been increasingly attracted to Chinese food that doesn't require side dishes and has a clear main ingredient. Recently, I have been returning to the starting point, reading old books on Chinese cuisine when I have time." The dishes made by Chef Masuki feature a simple and gentle taste, using carefully selected ingredients and stock that is made with precision. The stock is made with Fukuoka's special chicken, "Kodokoro," and cooked at a low temperature for 15 hours to retain the flavor. Fresh fish and fruit are purchased only from reputable stores, such as "Tanaka Shoten" for fish, and 3-star fruit and vegetable store "Midori", for vegetables. For the tofu in "Mapo tofu," the restaurant uses "soft tofu" from Shirousagi, a tofu factory in Shimane Prefecture. For leek, the key ingredient in Chinese cuisine, the restaurant chooses "Senju leek," which is sweet and retains its shape when boiled. The restaurant is also particular about the material of the knives used, so that they can prepare the best quality green onion for each season. A popular menu item is "braised pork." The Miyazaki-brand pork, "Tenkeibiton", that has a high percentage of lean meat, is boiled down in Chinese soy sauce, "Lao Cho", and five kinds of spices for 24 hours. The drink menu is selected by his wife. In addition to Tsingtao beer, wine (from Italy, France, Germany, and Japan), 6 kinds of Chinese sake, white sake, non-alcoholic beer and Chinese tea, are also available.
The interior reflects the cuisine of "Chinese Cuisine MASUKI." European lighting and "Seven Chair" from Demark make a simple and sophisticated space. There are counter seats and table seats that can be reserved for up to 10 people per day.
