Sushi Wakon is located at the 4th floor in the 5-star hotel, The Peninsula Tokyo, with a superb location that overlooks the Outer Gardens of the Imperial Palace and Hibiya Park. It is an Edomae-style sushi restaurant where you can enjoy without feeling tense, and can be surrounded by friendly service of the staff in a luxurious space.
Sushi Wakon is produced by Rei Masuda, chef from 2-star Sushi Masuda in Aoyama. After training at Sukiyabashi Jiro in Ginza, Chef Masuda opened Sushi Masuda in 2014. In 2016, he opened Sushi Wakon in Four Seasons Kyoto. Then, in May 2019, he opened the second brand of Sushi Wakon The Peninsula Tokyo. Head chef of Sushi Wakon is Masashi Yamaguchi Yamaguchi, who has worked at the sushi restaurant in The Ritz-Carlton Tokyo and then at Sushi Masuda. After that, he served as the head chef of Sushi Wakon in Kyoto for 2 years and 8 months, and was rewarded one star for 2 consecutive years, so he was appointed the head chef of Sushi Wakon Tokyo.
Only Omakase Course is served here, including seasonal side dishes and chef's selected sushi. The carefully selected ingredients are purchased from Toyosu market by Masuda and Chef Yamaguchi. The vinegared rice, which greatly influences the taste of sushi, is served in a state where you can feel the shape of the rice grain and the "rice is stretched." As a result, the timing to serve it to the customer is calculated backwards and cooked in a bucket. Only one kind of rice vinegar is used, and it is made into a sour and sharp vinegared rice to go with nice sushi topping, the ultimate Edomae sushi. "Please look at the box of sushi ingredients and tell us your preference," said Chef Yamaguchi. About 15 to 20 kinds of sake are available under the supervision of "JAPAN CRAFT SAKE COMPANY" which is now represented by Hidetoshi Nakata, a pioneer of sake. The main wine includes champagne and white wine.
