A Japanese restaurant where chef Hisama Hirano demonstrates his skills in Hiroshima

A street south of Peace Boulevard that crosses the center of Hiroshima City. Chisou Sottakuito is a Japanese restaurant located in a corner of an area with famous French and sushi restaurants. When you open the door, the proprietress, Emika Ueda, and the chef, Hisama Hirano, welcome you gently.

In order to remain a high-level restaurant, Mr. Hirano continues to pursue deep and genuine ingredients. He does business with SASUE MAEDA Fish store from Yaizu City of Shizuoka Prefecture, which is popular among famous chefs of the world, due to his reliable judgment. Together with the Hiroshima Prefectural Central Wholesale Market "Yoshifumi", they search for a better method of exsanguination. The most important thing is dashi (soup stock). "In Hiroshima Prefecture, there is a world-famous soft spring water everywhere that brings out the flavor of kelp in soup stock. We want to entertain guests with "Dashi no Itteki" in Hiroshima, which has many visitors from home and abroad. I want to make a city where I can do that," chef Hirano said. They go to the spring water in Hiroshima every day and serve the best dashi that shines in the golden color taken from the vintage taste of Fukui prefecture "Okui Kaiseido", such as natural Rishiri kelp and natural Rausu kelp. When you eat the fish placed in front of you and smell the broth, you can immediately feel the difference in taste and flavor. If you try it along with chef Hirano's explanation of the ingredients and cooking, your palate will be enriched and you will be able to enjoy the meal more. The drinks are selected by the proprietress who is well versed in Japanese sake as she goes directly to the brewery. There are 10 - 12 kinds of local sake of the season purchased not only from Hiroshima but also from all over Japan. Considering the dishes served just before the meal, the restaurant would recommend the sake that goes best with the dish. Bottled beer, wine (5 - 6 kinds of red and white), shochu, and soft drinks are also available.

In the interior where you can feel the warmth of the wood, there are counter seats (9 seats) and private rooms (4 people). You can enjoy the real taste of Hiroshima at a leisurely pace at a dinner party with your family, friends, business guests and dates.
