An innovative restaurant overlooking the sea, in a Western-style building in Shimonoseki, Yamaguchi

The restaurant is approximately 20 minutes’ walk from Yamaguchi Shimonoseki Station. Located in a perfect location overlooking the sea, chef Kenichi Takatsu offers innovative cuisine overflowing with the charm of Shimonoseki.

Chef Takatsu, from Shimonoseki, Yamaguchi Prefecture, wanted to be a chef and learned cooking at a restaurant in Fukuoka. After that, he went to Canada and learned English while working at a Western-style restaurant. After returning to Japan, he not only worked at “Trattoria ALBERI” in Shimonoseki, but also at Karato Market to learn about seafood. He went abroad again, and this time he experienced working at a famous and prosperous store, “Basta Pasta”, in New York. As he returned to Japan, he went back to Fukuoka and worked as a sous-chef at “La Maison de la Nature Goh”. In 2017, he opened his own restaurant, “Restaurant Takatsu” in his hometown of Shimonoseki.

Chef Takatsu uses local ingredients to create dishes that are free from any genre. It is a cuisine that uses the ingredients without adding too much, pulling too much and destroying the flavor. For example, in summer, chilled lettuce is served with blue cheese sauce and Delaware. In winter, blackened nappa cabbage from Shimonoseki is served with blue cheese sauce, walnuts and parmigiano, and also Chef Takatsu’s favorite blueback, such as sardine and mackerel, are smoked, served with grilled skin, eggplant from Shimonoseki with smoked garlic, pickled garlic puree, red onion pickles, and so on. The wine that goes well with the creative dishes varies from France, South Africa, Australia and Japan. There are always 5 ~ 6 types of red, white and sparkling wine by the glass. There are also several kinds of sake such as local sake from Yamaguchi Prefecture.

The building “Restaurant Takatsu” is located is a Western-style building of a former whaling company that was built in the Taisho era. The chef renovated the building with his sensibilities while keeping the ceiling and pillars of the building, which is designated as a national tangible cultural asset. The counter, which is limited to 9 seats, is made of mortar mixed with ink to create an uneven look, and then ground with a sander to match a retro building. “Restaurant Takatsu” with a nostalgic feeling is recommended as a place for family, friends, dates and wine parties. Please enjoy the innovative cuisine of chef Takatsu, whose charm lies in Shimonoseki.
