Under the supervision of one-star restaurant, a Japanese restaurant in Ginza based on tea kaiseki

A 3-minute walk from Higashi Ginza Station in Tokyo, “Yuzuki” is located in a quiet place near Kabuki-za and Shinbashi Enbujo, away from the bustle of downtown. It is a restaurant supervised by the owner of Omotesando's one-star restaurant “Japanese Cuisine Tagetsu”, Hideo Mochizuki.

“Yuzuki” is headed by Tomoya Takayama. He was first recognized by his high school teacher for his talent as a chef, and after graduating from Tokyo Seishin Ryoshi Senmon Gakko, he cultivated his skills at a Japanese restaurant in his hometown of Yokohama. He joined “Japanese Cuisine Tagetsu” in 2013 and was trained under Mr.Mochizuki to make appetizers, hassun, fried dishes, grilled dishes and hot pot dishes. When “Yuzuki” opened in July 2019, he was selected as the head chef. It is a traditional Japanese cuisine based on tea kaiseki, and the seasonal seafood delivered directly from the production area is carefully prepared. The ingredients are prepared differently, either served fresh or left for few days to increase the flavors. For example, during the sweetfish season, sweetfish from Kamihachiman in Nagaragawa-gun, Gifu Prefecture are used and served in the "earthen pot rice", so that you can fully enjoy the aroma, umami and bitterness. The tilefish from Hagi City, Yamaguchi Prefecture is served in a bowl with the finest soup stock with freshly grounded dried bonito flakes. The fatty natural red sea bream from Akashi is grilled over straw to bring out its flavor.

There are 8 counter seats made from natural Kiso cypress and 3 private rooms (4 ~ 6 seats). The restaurant is particular about the dinnerware that expresses Japanese culture and tradition, focus mainly on Wajima lacquer ware and ceramic art. Among them, the pottery created by Oka Shingo, a ceramic artist from Karatsu, Saga Prefecture, is eye-catching. You can enjoy the food and space in “Yuzuki”, where you can feel the seasonal changes, for various occasions, from private use such as with family and dates, to business gatherings.
