Kohei Taguchi has gained experience at numerous famous restaurants including Sapporo, Kobe, Tokyo “AIMEE VIBERT”, “Restaurant FEU”, “mikuni MARUNOUCHI”, “L'Effervescence”, “AMOUR” and “Bawaon”. He also learned winemaking at French wineries “Philippe Leclerc”, " Jean-Claude Rateau" and " Meo-Camuzet" and became the manager of “Aligoteur Que du bonheur” since 2018.
Based on French cuisine, the restaurant serves dishes that meet the needs of guests in a fusion style that incorporates elements of Chinese and Japanese cuisine. Ingredients are purchased from various places, such as Ishikawa Prefecture in Hokuriku, Akita Prefecture in Tohoku, Fukuoka Prefecture in Kyushu, and Toyosu Market in Tokyo, and the menu is developed based on the preparation of bouillon, fond de veau and consommé. They visit the winery every year in France where Mr. Taguchi was trained and make wine. The passion for French wine is very much reflected in the wine selection of “Aligoteur Que du bonheur”. They have famous French wine that can be served not only in a bottle, but also as a pairing or by glass. The restaurant uses carefully-selected glasses, such as from "Kimura Glass Shop" in Japan and “LOBMEYR", which is a high class old brand in Austria.
The secret hideaway for adults has a chic counter kitchen with wood grain that can accommodate 7 to 8 people and a private room for 3 to 4 people. You can enjoy a luxurious time with friends, dates, wine-loving friends and foreign guests, together with various hospitality from cuisine to French wine by Mr. Taguchi, who is fluent in French. The secret entry method as a restaurant by referral is known only to a limited number of customers, so please check it in accordance with the rules of the restaurant reservation.
