French cuisine “l'algorithm” is located 5 minutes by car from Hiroo, one of the most densely populated gourmet areas in Tokyo, and a 12-minute walk from Shirokane Takanawa Station on the Toei Mita Line and Shirokanedai Station on the Tokyo Metro. The name of the restaurant means "equation" or "procedure for solving".
Chef Hiroki Fukaya, starting from “Ginza L’ecrin”, he worked at several places including 1-star restaurant “Ze kitchen galerie” in Paris and 3-star restaurant “Quintessence” in Tokyo, and opened “l'algorithm” in 2017.
The restaurant only serves omakase course with 10 ~ 11 dishes. All the ingredients are purchased directly from the farm where chef Fukaya goes and has connections with. Without making any specific specialty or standard menu, he simply uses the best ingredients of the season to cook. The drinks are selected by the chef in order to convey Chef Fukaya’s thought of "We want to provide carefully-selected lives in the best condition, temperature, cooking method, composition, and combination we think". They only have wine pairing and non-alcohol pairing that match with the dish. The pairing is selected by the chef to create a perfect combination with the food.
There are only 8 counter seats in the modern restaurant base around the color white. The counter, where everyone can see the chef, is designed to give chef Fukaya 100% of what he thinks of himself as a chef and to emphasize the temperature and aroma of the food. This restaurant is recommended for gatherings with close friends, gourmands, and dates. English and French service are also available for oversea guests. In a space with a private feeling, we would like you to experience the formula of gourmet food that is made by the chef.
