A sustainable counter French restaurant born from a one-star restaurant in Sapporo

WINEMAN is located in the downtown area, three-minute walk from Susukino Station in the center of Sapporo City. This is a counter French restaurant opened in September 2018 by Akihiro Nagao, the owner-chef of the one-star local production for local consumption restaurant Aki Nagao, which is 300m away from WINEMAN on the same street.

The chef at WINEMAN is Mr. Nagao's right-hand, Eriko Tsunoda. Chef Tsunoda, a registered dietitian, entered Aki Nagao in her twenties. She began studying French cuisine in earnest, gaining knowledge and experience at a culinary and confectionery school "Le Cordon Bleu" in Tokyo, and after working at a French restaurant such as "Paul Bocuse" she was able to work under the Mr. Nagao again.

Mr. Nagao's concept of WINEMAN is "Sustainable". The idea was to create a restaurant that would eliminate waste and burden of the world. For example, vegetables that are thrown away just because they are poorly shaped, or ingredients that have been used for meal preparation, are transformed into delicious French cuisine using cooking techniques. Walls made from waste such as bread crumbs and coffee powder, and "Sapporo soft stone" which are no longer used in recent years, are used everywhere in the restaurant.

The main dish of Ezo deer, which is purchased directly from a contract hunter, is popular among the enjoyable dishes of the day made from the same high-class ingredients as Aki Nagao. There are more than 100 kinds of natural wines available, mainly from Hokkaido and other countries around the world. Pairing that goes well with your meal is recommended. The restaurant can be used as an aperitif in the early hours or as a wine bar after meal. In the chic interior that is unified in monotone with dim lighting, there are 10 high stool counter-seats. Inside, there are 4 separate seats and private rooms, and you can use it secretly from the other entrance. Please feel free to visit for a wine party or a date.
