Shunsaiten Tsuchiya, renovated from an atmospheric old house in a tranquil residential area, can be found an eight-minute walk from Esaka Station in Suita, Osaka Prefecture. The restaurant was opened in July 2008 by chef-owner Yukihiko Tsuchisaka, who honed his culinary skills at several renowned Japanese restaurants for years, and offers dishes that demonstrate harmony between Japanese cuisine and tempura. Awarded two stars in a world-renowned restaurant guide, the restaurant attracts many guests both within Japan and from abroad.

The restaurant’s name “Shunsaiten” reflects the chef’s commitment to delivering “graceful tempura featuring seasonal ingredients.” The multi-course menu of the chef’s choice combines the delicate seasonal flavors of Japanese cuisine and the robust flavors of tempura to create a unique dining experience found only at the restaurant.

With the belief that the ingredients should be purchased every morning, managed, and cooked by the chef himself, Tsuchisaka purchases the best ingredients from around Japan, including vegetables from local farmers and locally caught fresh fish and shellfish. The tempura is deep-fried using cottonseed oil, an oil that imbues dishes with powerful umami and sweet flavors, and extracted exclusively by Okamura Oil Mill in Kashiwara, Osaka Prefecture, to highlight the flavors of ingredients.

In order to clarify the characteristics of each ingredient, they are carefully checked, coated with batters of varying thicknesses and water content, and deep-fried at different temperatures for different lengths of time, depending on the cut shape and thickness of the ingredient. Also, the way the tempura is cooked and the temperature it is served at are different, depending on the season. The flavors of elaborately made tempura are further accented by three kinds of dipping salt: rock salt, offering simple saltiness, seaweed salt with a robust umami flavor, and bay salt that blends well with a diverse array of flavors.

The wine list includes 50 to 60 wines, mainly from Europe, the New World, and Japan, as well as a wide selection of wines by the glass. Guests can taste and select wines for their meals. The drinks menu also offers some 20 labels of Japanese sake, sourced from around Japan, but mainly from the Kansai and Kinki regions. Homemade nonalcoholic cocktails and thick grape juice are also recommended.

The restaurant’s exterior is black and white with stucco walls and a tiled roof, reminiscent of a traditional Japanese storehouse. In contrast, the interior is lined with plain wood in natural shades and brown-colored timber to add warmth. The restaurant has a private room with a dining table (seating up to four guests), as well as a counter with 12 seats to allow guests to sit and watch the chef skillfully deep-fry tempura right in front of them. The tableware that gives a feeling of the season is crafted by contemporary artists.
