Five minutes by car from JR Hakodate Station or the Shiden Jujigai Station, and then a five-minute walk up to the Nijukenzaka, you will find Maison FUJIYA Hakodate. The owner-chef, Keisuke Fujiya, works in Motomachi, the most popular sightseeing spot in Hakodate, Hokkaido.
"Chef Fujiya of Hokkaido," as he is known, is famous among gourmands. Raised by a fisherman in Esashi, Hokkaido, he has been fond of fish and interested in cooking since childhood. He admired the popular TV show “Iron Chef” and entered Hattori Nutrition College, which supervised the program. After graduation, he studied at traditional French restaurants in Tokyo, named Le Bouchon in Hamacho Nihonbashi and Apicius in Yurakucho. He then worked as a sous chef in Sapporo French Restaurant Banquet and then as a third-generation chef at Restaurant Cotedor in Sapporo for seven years. When Obternir K opened in 2017, he became the chef. Three years later, he became independent and opened his own restaurant: Maison FUJIYA Hakodate.
For chef Fujiya, his restaurant is a place of memories, where dreams come true. It is right next to the place where he did catering for the first time, not long after he got one star as a chef in Restaurant Cotedor in Sapporo. He says, “I thought it would be nice if I could open my own restaurant in such a location someday." Hakodate is also a treasure trove for the best local ingredients, especially those from the market and port in nearby Hakodate. “I want to make history together with the producers so that the food culture of Donan becomes a better culture,” he adds. He mainly uses ingredients from Donan, Hokkaido, including Shinai oysters, local masu salmon, Hakodate's various squids, hairy crabs, conger eels, scallops, surf clams, and king shiitake mushrooms from Nanae Town. He makes the best use of the finest ingredients to build dishes that are sure to be remembered by diners.
The wine pairing also contains chef Fujiya’s strong desire to boost his motto — "Made in Hakodate" — to the world. His passion means that he is involved in production at local wineries and breweries. Japanese sake produced in Donan also appears on the menu.
The interior of the restaurant, which has an open, light feeling, has wooden chairs from Carl Hansen & Søn and tables with white crosses, creating a natural atmosphere where the food and the superb view blend together. The dishes are accentuated by a wide variety of dinnerware, such as those ordered from glass artists in Otaru and Toyako, Arita-ware, and J.L Coquet from France. There are 30 seats in total, with table seats and semi-private rooms for up to 10 people. A casual bistro is on the first floor.
